I agree that you will probably observe sea kayaks, at least if you have a journey of several days and would like to meet a few good miles of one day. If you are running or rowing a drift or not is a matter of personal taste. I prefer something in the order of 17-18 feet for long journeys. A boat like the leadership of two weeks immediately with plenty of space for fresh food, wine, or what items you give comfort.
Everyone wants a stable boat, but it means something different for everyone. Some people want a boat that big, flat floor that feels stable on flat water (but not in rough water, which should not be a problem for you in Mississippi). But you will sacrifice a little speed and performance. Others take a boat that feels more tippy at first but can later be solved in a short time. These can be tilted upward at the margins of maneuver and easier.
Try to find a shop where you can go to boat shows. Refine things, then go for more demos, as on any boat that you will be introduced over a long period. Thanor remember that the ships will be treated differently when it is fully charged, try to prove with more emphasis on the hatches.
